Meet the Team

 

John Hall ~ Owner

John first began his catering career in the Faenal Fawr Manor House working with his brother, Dave Hall. His experience enabled him to purchase Brookhouse Mill in 1981, yes 25 years ago, opening after major refurbishments in 1982.

 

The Kitchen Staff

 

Head Chef

Aaron Broster has been leading the brigade for over 5 years. Working in most notable hotels in Brighton and the local area as well as running his own restaurant for 2 years. He has competed in many chef competitions and was given the honour of Vegetarian Chef of the year a few years ago.

 

Larder Chef

Gavin Edwards has also been with us for over 5 years and supports Aaron in his quest for using Welsh produce in interesting ways. Gavin progressed straight from college and thrived on the work environment.

 

Chef de Partie

James Brindley who is a talented member of this young team, is in college His ideas are fresh and imaginative with a particular flair for the sweeter things in life.

 

Heather Owen is never sure which hat she will be wearing as her skills are diverse. She is flexible and can work throughout the business and has skills in the kitchen as well as front of house. Heather is the gel between the two and her Irish charm ensures harmony prevails.

 

Aaron is supported by a young team of fledglings from college who are eager to learn from his wealth of experience and flair.

On any night you will be welcomed by one or more of our managers.

 

General Manager

Nigel Roxburgh has run the business for over fifteen years and has a knowledge that encompasses every aspects of the restaurant. His multi-skilling ensures that he knows how both kitchen and front of house departments can work together. Nigel’s hard work runs the kitchen on all our outside catering events. His hobby is music, which explains why he is our resident DJ.

 

Jacob Hall

Jacob has grown up at Brookhouse Mill and is a natural in his role as trainee manager, learning at his father's feet. Jacob has many strings to his bow and is also a member of our outside catering and marquee team.


Max Sharples

Max is our Bar manager and ensures everything from the local real ale to a decent Shiraz compliments your meal and perhaps he could tempt you to try a cocktail, which is his passion.

 

Charlyne Manshanden

Our resident Australian, is the friendly face who welcomes you. With ten years experience in the hospitality industry from notable European hotels to the ski resorts of Austria, she will ensure your experience at the Brookhouse Mill is an enjoyable one.

 

Francesca Hughes

Francesca returned home from university into her role of Head waitress. She looks after everyone in the restaurant while also preparing our homemade desserts, and gives inspiration to our many theme nights run throughout the year.

 

He has developed the business from a restaurant of 40 covers to 165 covers which extends over two floors. On top of all this he has a thriving outside catering business which just keeps getting better and better.

 

Of course all this wouldn't have been possible without the support of his valued staff and family members that went along with all those "mad ideas".

 

Karen Hall ~ Owner

Karen has fronted the restaurant for many years and has been instrumental in developing our successful outside catering business.

 

Karen is our wedding planner and has assisted brides and grooms create first class weddings in the North Wales area, over the last ten years.


All the other staff both past and present have all contributed to the high standard of service we pride ourselves on. We have a great team of young boys and girls guided by the odd old pro who all gel together to ensure your have a wonderful experience of Brookhouse Mill.
